SHOPIFY HTML DESIGN SUB CATEGORIES FOR ALL CATEGORIES I CREATE IN FUTURE 2-3 deep SUB CATEGORIES

I recently started a shopify store and have spoken to multiple shopify "gurus" and I am having an issue with site navigation. it is not an issue on other platform I use. cant believe shopify doesn't have this functionality (crazy) and they told me to contact you.
I just started my site, but I need some logical navigation for main and sub categories
as example ,
if you look at CLOCKS link on home page and pull down menu "For the Home"
now clocks have many categories ,
ex, cuckoo clocks , wall clocks, desk clocks, novelty clocks, etc... etc...
so when you click on clocks image/link it should take you to the sub categories page of all clocks
then if you click on CUCKOO CLOCKS , guess what their are subcategories of that too
then you should see sub categories of these on next page
ex. 1 day cuckoo clocks, 8 day cuckoo clocks, Quartz Cuckoo Clocks, Chalet Cuckoo Clocks , Musical Cuckoo Clocks, etc.. etc...
and then click and see the items
an in some cases you may have a couple more categories then to products
logical navigation for customer.
otherwise its a bird nest of endless clock item pages. crazy
and the same goes for other category items globes, beer steins , and all the rest items I will be adding
