I measure rather than guess. First pass is analysis, not processing: noise floor, spectral balance across bands, and where the speech actually sits relative to the noise. That tells me how much reduction the recording can take before it starts costing intelligibility. On the robotic-artifact problem you raised - that comes from over-aggressive broadband reduction. A deep gate pumps and makes speech swirl, which is exactly the sound you do not want. I go shallow and iterate, checking the result against measurements instead of trusting my ear after twenty minutes of listening to the same clip. Order of work: measure, remove the steady hum at its fundamental and harmonics rather than gating the whole band, shallow broadband reduction, then rebalance tone against the speech itself rather than a preset curve. De- ess and level last, with a limiter only as a safety net, not as loudness. Plus the before/after measurements so you can see what changed rather than take my word for it.
