Rework or Create Spreadsheet for Scheduling Classes and Instructors

I am looking at reworking a training schedule our company use on Excel. We are a training company with 5 locations around Australia with 5 separate spreadsheets. My biggest goal is to get them combined onto a single spreadsheet to be able to have better vision across the company. We have multiple classes that learn a variety of subjects and our Instructors all have slightly different qualifications. On the spreadsheet, I program the subjects that a class needs to learn and then assign an Instructor to that class that can teach that subject using their initials. Their initials are captured on another tab which can show me instructor availability or if they are in class.
I want to be able to expand this spreadsheet to include the 5 locations, having filter/splice functions for locations, classes, training type etc so the document is easy to navigate and forward plan for areas where we may be short instructors. I would also like to be able to extract data from this, like Instructor use (highlight an instructor with a period of time to see what % they were in a class or available.
I have attached a copy of a spreadsheet we use, the other locations are much smaller. You can see the class name down the left, which would be nice to break up into the different types of training they do, and then throughout the year you can see the subjects they have which are numbered subjects. The 2 letters under the subject are for which instructor type needs to teach that and then the other 2 letters are the initials of the instructor which gets displayed on the 'Availability' tab. The 2 main tabs we use are the 'Schedule' and 'availability'. The other tabs on this are for the subject templates for copying and pasting onto the 'schedule' tab.
