Hi! I use Digital Ocean myself, they have great tutorials and a great service overall. Not sure what to say, this seems as straightforward a task as possible. I believe it won't take more than 2-3 hours. Since I assume you don't (and shouldn't) want me to keep the vnc (as well as ssh) password, I'll provide instructions on how to change it, once done.
