As a manager of a food processing plant, you are asked to design a process from the collection of Apples to the packaging of 100 kg of powder of Apple juice. However, importance should be given to the unit operations of food processing.
PROJECT: First, it is assumed that apple contain in average 80% wt. of water, 10% of solids and the remaining are aroma substances and the weight of one apple is about 100 grams. It is supposed that only 87% of water and 98% of aroma can be extracted from apples. The concentrated apple juice contain 55% water, the remaining being aroma substances. In the final step, the dehydrated apple juice contains only 2% wt. of moisture and the remaining is aroma substances.
