You have plenty of memory so optimising MySQL will be the first thing to do. APC also needs to be configured so that it does not use too much memory, but that the cache is large enough to hold all of the php scripts. I have just had to do this for a client recently and the main thing that had to be achieved was to get the requests out as quickly as possible.
