Hello Sir, You are willing to extract text from pdf and documents. For this, we have two procedures one will give you the raw text and another will give you text in a structured format. I have done some research for both cases. If you want, I can share the screenshot of the outputs to you.i have done it using python as well as AWS textract. I would first use opencv to have the results and then create a new OCR by training the data using deep learning
