Administration and deployment of a Windows application

I write software/application for financial firms. The applications mostly consist in calculating different types of (financial) risks. The computation algorithms within the application can be rather complex and are coded in C++. The UI consists in an extension of Excel via an addin (VSTO Excel addin, coded in VB.net). The IDE used is Microsoft Visual Studio 2019.
Although I am relatively comfortable on the math & coding side, I am less so on the parts necessary to deploy an application for Windows.
I am therefore looking for help on the following topics: administration and deployment (e.g. how to "release" the application, either onto a stand-alone machine or a server), improvements to the development set-up and process (e.g. git), etc.
I am based in Aix-en-Provence, France.
