Interdigital Capacitor on PCB

I am designing a capacitive soil moisture sensor. It is based on the interdigital capacitor and will be manufactured on a PCB.
I will need the formula(s), with a brief explanation, in order to calculate the total capacitance of the PCB probe (when it is on the air and when it submerged on the water). My aim is to use these parameters (along with the others parameters from the electronic circuit) with an optimization algorithm and find the optimal capacitor design. And then compare the theoretical values with the actual ones.
Therefore, all parameters should be included, such as:
- Number of fingers (N)
- Length of finger (L)
- Width of finger (W)
- Gap between fingers (G)
- Substrate dielectric (of FR4)
- Height of substrate
- Height of PCB trace
- (and any other that I am not aware of)
I would like to estimate the capacitance of the probe for two cases:
1 – Without backplane (meaning that the fingers will be on the top side of the PCB. The bottom side will have no traces)
2 – With backplane (meaning that the fingers will be on the top side of the PCB and the bottom side will be a ground plane)
Additionally, I would need an estimation of the volume of the electric field. In other words, what is the volume of soil that affects the capacitance of the probe, when the dielectric of the soil changes due to water.
