Consultation with LAMP expert - Upgrading PHP

I current have a server that is running:
PHP version: 5.3.3 (MySQLi)
MySQL version: 5.1.73
I would like to investigate as to how to safely upgrade these to a higher versions without breaking the server's other applications. There are many scripts installed that use php but some new apps like mautic and roundcube want a higher version level. I've been afraid to blindly upgrade server with with knowledge on how to return (down grade) to earlier versions should everything stop working.
