Hi. Interesting project. Currently there are very versatile programmable devices that can adapt to almost any need and I'm sure that in your case it would work very well. I recommend using Arduino development modules with some accessories (sensors, relay module, etc) to update your old hardware in an economical and versatile way. These modules, being programmable, can modify their operation in a fast and simple way, just by modifying some lines in the programming.
