Email setup

I have a website and a server. However, instead of using my server to handle incoming mail, it goes through gmail. I access my email via Outlook. But, I can't stop gmail from processing incoming messages and assigning them to folders, like Inbox or various gmail categories. The problem is that some emails aren't assigned anywhere. They're not in my Inbox or in a any gmail category. I can only find them by checking All Mail. As a result, I'm missing important emails. I need to remove gmail from the process and have my email handled by my email server. I have another email address that's already set up that way, so I know my server is set up to be a mail server.
